What I Ate Wednesday: Trick Your Mind

I get bored easily. Or, at least when it comes to food I do. Sometimes I just don’t feel like a salad for lunch or a protein/veg/carb plate at dinner. This week, I haven’t even felt like eating oatmeal (gasp!). So, I’ve made it my mission these last few days to simply follow what my mind is telling me and try something new. If eating the same thing every single day gets tiring, trick your mind by just mixing it up! 

Exhibit A: Make What You Crave

IMG_3972I’ve been dreaming of sushi lately but haven’t gone.  Who said that chicken can’t be sushi? This immediately crushed my craving and was a fun way to eat the chicken I prepped this week.

IMG_3959I couldn’t figure out exactly what I wanted for breakfast so I decided to have a bit of everything. Spinach and tomato omelette, peach, and a piece of low carb toast with half-peanut butter, half coconut oil spread.

Exhibit C: Same Ingredients, Different Presentation

IMG_3939Sometimes I eat a Greek yogurt bowl for breakfast or a snack with a bunch of mix-ins. Instead, I took all the ingredients, tweaked the ratios a little and made a giant pancake. This made me feel like I was eating something different and kind of extravagant even though it was the same items.

What I Ate Wednesday

The alternate title to this post is: In the week of Valentines Day, consume lots of chocolate.

I was on a chocolate roll this week.

First, I finished my chocolate bread from last week.

I added cocoa powder to my oats almost every day (and sprinkles for Valentine’s Day)

I made this little chocolate cake for a Valentines Day treat (with peanut butter, chocolate peanut butter and whipped cream). Which I ate while watching The Notebook. Totally cliche.

It was so good, I decided to make another one the next day. Fun fact: I don’t have a microwave so these mug cakes are more than just 1 minute cakes.

Besides my love for chocolate, I have a deep love for anything graham cracker or s’mores, although I’m not the biggest marshmallow eater. The idea of a s’mores lava cake came to me the other night while I was sleeping and I HAD to make it that next day.

I baked it a little too long so the lava didn’t ooze as much as it should have but it was my first lava cake so I’m cutting myself some slack.

Luckily for you, after I make this again, tweak a few things and make sure it does in fact erupt properly (ha lame lava joke…) I will share the recipe. Even a bit overcooked, I ate the whole thing.

I also found a ginger Chocolove bar this week. I wish I didn’t because I keep eating it.

I’m thinking I should probably cut back a little on chocolate this week to compensate buttttt, dark chocolate is good for you, right?

What I Ate Wednesday

Happy What I Ate Wednesday!

I don’t know what happened this week but I went into a frenzy of eating things I didn’t make. I had to go to local pastry shops, try something from a food truck and treat myself after spending hours upon hours doing homework.

Everything in moderation though is the name of my game lately. I enjoyed and savored all the treats (in reality, two treats, one healthy food truck experience) as I wandered around my city for an hour each day taking a well deserved break from my computer.

Spending the day working was worth it to eat these things though. I love finding the places I’ve heard about but never gone to (i.e. Flour Bakery-I had sticky bun bread pudding. oh my gosh. first bread pudding experience and it was so good)Image

and trying something unique that I’ve never had (i.e. seitan).

and of course enjoying something I hadddd to have–pumpkin ice cream with an oatmeal cookie. YUM.

I also got my David’s Tea. Honestly, I could only drink half before the chocolatey taste got a little sickening but it was good to start with.

Besides the treats this weekend, I actually ate most of my food at home.  Honestly, I love eating out occasionally but I definitely prefer making my own meals. I get to play around (or eat the same thing over and over), control what I’m eating and I get to go grocery shopping in order to put things together. Anyone else love grocery shopping?

What I Ate Wednesday

*TV Game Show Announcer Voice* Welcome to another edition of What I Ate Wednesday. Thanks to our host Jenn for once again providing a fun way to showcase some delicious food. Now onto this weeks feasts, I mean, eats.

In a random order and simple sentences, we have some of the plates I’ve enjoyed this week.

This week was filled with some of the same: Oatbran, obviously. I had pumpkin oatbran, blueberry oatbran, overnight oatbran and chocolate peanut butter among others. All delicious.

I bought some ground turkey this week so the first thing I cooked up were some turkey burgers (served with sweet potato with crunchy peanut butter, broccoli and asparagus)

one for now, some for the freezer for later.

Green smoothies made a comeback this week. I discovered that using a frozen banana and protein powder with water, almond milk and lots of ice makes the protein powder fluff up. Volume is my friend.

I was CRAVING pancakes the other day so I whipped some up and man, were they delicious. Perfectly fluffy and warm. So good–topped with some Walden Farms Syrup and PB2 sauce. yum.

The week of Halloween wouldn’t be complete without some treats. Don’t ask me why I needed a bowl of candy corn to make my house festive because now all I do is eat them.

I got a free froyo too! Pumpkin with graham cracker crumbs and dark chocolate chips. I almost died when the owner asked if he could take a picture for Facebook but obliged. Nothing beats free fro yo. Nothing.

Not being Paleo has brought me back to the good stuff–sandwiches. Today I enjoyed a chicken sandwich with some carrots and sweet potato wedges. Simple and perfect.

What I Ate Wednesday

Hey there!

I’ve been MIA as I was home for a few days during my long weekend break from school.

Instead of hanging out on the computer, I spent my days out and about, hitting the gym, seeing family I haven’t seen and just enjoying being home. I also made a point to go to Walmart and Target because moving to a place where those stores aren’t makes the experience of one stop shopping even better. I’m a Target sucker. Walk in to just browse, leave with everything. Snacks made their way home with me this time (s’mores Goldfish? I had to have them).

I also made sure to hit all my favorite food spots and ate sushi, had froyo twice (…they had pumpkin pie and a 20% off coupon soooo…) and a salad from a local restaurant. Yum.

I made this bread last week and plan to share the recipe tomorrow. I ate the whole loaf in a day. I’m the worst bread photographer but trust me on this one.

My favorite meals this week remain as oat bran. I’ve been trying out new “flavors” and so far, every single one has been delicious.

Cookie Dough: Mixed with just the powder of PB2, a bit of vanilla extract and topped with some dark chocolate (and a drop of whipped cream for fun)

Apple Pie: Softened apples, vanilla extract, butter extract, peanut flour and lots of cinnamon

I went apple picking this weekend which means I’ve been eating a ton of apples and apple butter that I picked up. Nothing beats fresh apples.

What I Ate Wednesday

As always, thanks to Jenn for hosting What I Ate Wednesday!

I was pretty impressed with myself this week when it came to food. I’m pretty sure everything I ate was better than usual. I guess I kicked the cooking up a notch instead of going to the plain chicken and veggie route that I usually prefer when it comes to cooking meals.

Breakfasts:

Creamy Oatbran every day this week. When I really like something, I commit. That and the fact that I bought three small zucchinis last week in preparation and needed to use them up.

Lunch:

This week my lunches looked a lot like salads. And warmed salads that I didn’t take pictures of. If you’ve never had a warmed salad, get on that. Perfection I tell you.

Dinners:

I made baked eggplant parm earlier in the week that I ate for, 6 or 7 meals. That’s my only problem with batch cooking is that I have to eat the same thing over and over again. Luckily it was good.

Desserts:

Yogurt. Every night. With some peanut butter and maybe some healthy chocolate sauce (cocoa powder and water). Yum.

I went to a food festival this weekend too where I chowed down on ice cream that was made literally a minute before and an egg inside a scallion wrap thing with cheddar. Oh my god. It was flaky and delicious with a runny yolk inside. Heavenly. And the ice cream? Salted caramel with caramel corn. It was so cool to watch them make it right there!

What I Ate Wednesday (#5)

As I mentioned earlier, I’ve been trying out Paleo for the last few weeks. So far, so good. I expected it to be easy but lemme tell you, more things have sugar and gluten in them than you think. So far, reducing my fruit intake when all this delicious fruit is in season has been the most difficult but definitely do-able. I’m really enjoying the extra energy I have and i’m liking the way I feel without dairy, grains and sugar. In one way, I have really found the whole transition easy as I didn’t really eat these things anyway but  at the same time, it has definitely taken a little adjustment.

The hardest part about this whole change has been making sure I have food prepared and with me. I’m definitely trying to get better at preparing in advance. Since I work in a kitchen owned by my dad, I figured it would be easy to grab things throughout the day. That part is doable but when I get home, I realize I have nothing to eat! This week I roasted some sweet potatoes to have for after workouts and made some carrot fries to eat throughout the day.

I’m breaking it down like Jenn this week.

Breakfasts: Mostly eggs and a vegetable. I’m loving tomatoes from our home garden and sauteed spinach when I have it.

Lunch: Burgers, steak, grilled chicken. These vary. I love me a burger smothered with onions and peppers though. Throw on a side of carrot fries and this meal is perfection.

Snacks: Carrot sticks, almond butter on some celery, a few nuts, a few slices of chicken. It depends on the day.

Dinner: Similar to lunches.

Dessert: I discovered I can make some Paleo desserts so, this chocolate pudding made it’s way into my fridge last night. Delicious.

oh. and the other night, this. glorious dairy free ice cream without refined sugar.
